For our last team meeting for the year, we had mini plum puddings. These are so easy to make and taste so good. The recipe is a mix of several that I have taken from different sources.

Ingredients
700 g christmas cake, crumbled
250 g chocolate, melted
1/4 cup brandy or sherry
Mix all ingredients together.
Using wet hands, roll into small balls about the size of a walnut.
Melt small amount of white chocolate and drizzle over the top of the mini puddings.
Decorate with Wilton holy mix decorations or alternatively small pieces of green and red cherries.
Tips
I used a cheap fruit cake from the supermarket.
Best served on day of making (for the brandy flavour), but to reduce the brandy evaporating, store any left over puddings in the fridge, covered with plastic wrap.
The recipe makes about 36 puddings
